The inspiration for Mercado, with its Cal-Mex recipes and old-world Mexican heritage, came to us after looking past the obvious icons of contemporary culture and going as far back as the Aztec culture that gave us maíz and chiles and the foundation of everything we all enjoy today as Mexican Food.
